Beef brisket is a bbq favorite. This cut comes from the breast of the cow, a muscle that the animal uses quite often, making it relatively tough. Although beef brisket is one of the tougher cuts of meat it can become a cut reserved for special occasions.
Brisket has a large fat cap. We recommend trimming the fat cap before cooking. The fat cap also acts as a shield against any seasonings used.
All our cattle are organically fed. We never use hormones, steroids or GMOs.
